For Gen V pokemon and lower, you don't need to use Smogon to search for their base stats and then their corresponding IVs but for Gen VI Pokemon, you will need to do some researching and comparing with the Pokemon from Gen V and lower.
All you need to do is search for the Pokemon in their database and enter their corresponding nature, characteristic and stats, or you can just enter the Pokemon name yourself and enter since the name goes odd when I search for some Pokemon, like Mewtwo. Then enter the level and stats for your Pokemon and the calculator will work out your IVs for you.
The higher the level of your Pokemon, the more accurate the data you will receive. Given time, you will be able to do this really fast and may be able to estimate it yourself.

As for EVs, the stats gained from effort value training scales with your level. Pokemon at low levels would be able to sweep the floor with everything if this didn't apply. Once you're about level 70(?) you will be able to get all of the points you invested into EV training your Pokemon. Every 4 EVs you pump into a stat gives 1 extra point into the stat. The maximum amount of EVs you can pump in a stat is 252. As I've mentioned earlier, EVs scales with level so you might not be able to see the effects early unless you put in a lot of EV for a stat. Assuming you pumped points into the stat where you obtained a positive nature, you will get 10% more on top of the stat you trained. For example, at level 100, if you put 252 points into attack, your Pokemon will get +63 to it's attack and an extra 6(rounded down) for having a positive nature in attack.
EVs can be gained from battles you are able to get exp from or by doing Super Training. With the addition of Super training, working for EVs became so much faster and made battling with wild Pokemon redundant. By clearing Super Training Lv.1-3 you will earn EVs for your Pokemon. You will also be given rewards for clearing them as well. This is important because the rewards you earn are based on how close your finishing time is to your record time. I'll get more into this in a moment. Secret Super Training will not give any EVs but instead give out items for clearing them.
The fastest way to EV train is by doing the level 1 challenge with your strongest Pokemon. Atk/Sp.A determines how much damage you deal. Def/Sp.D determines damage taken and Spd increases your ability to dodge. Each Pokemon have their own shooting speed, with some shooting faster than others. If you started with a Froakie, it's really beneficial as the Froakie evolution line has the fastest shooting speeds in the game. All you need to do is perform a charge shot in the level one challenge and it will be over in a flash. Not not to finish it too fast otherwise it will be difficult to keep your score close to your fastest time. unless you are super consistent. The punching bags you will be looking out for are "Stat" Bag M/L. Once you have racked up enough, just give them to the Pokemon you wish to give EVs to. Medium bags give 4 EVs while Large give 12. Make sure you keep track of/tally this after every bag. With this method, you'll be able to easily max out any of your two given stats, or however you wish to spread it. Remember that the maximum about of EVs for any given Pokemon is 510, so with 2 maxed stats, you will have 6 points remaining which is enough to add 1 point into another stat and pump the rest into whatever you want except for the maxed stats. The icon with the silhouette of a character with raised arms will flash to indicate the EVs for that Pokemon have been maxed out.

Super Training still seems quite confusing to me. Might be a while before I actually start using that =/
I've been Ev training using Power Items/PokéRus for as long as I can remember.
When a poke gives 1 EV in a stat, with the aforementioned Items/Pokerus it's still 10 EV's.
Beating 15 pokes doesn't take all that long (imo)
Still, I'll try the Super Training method and see how that works out.

What do you find confusing about it? :o
Honestly i think it's pretty entertaining and makes EV training in general easier for everyone. You can fully EV train a pokemon through super training in like an hour so it's not that much work (which i prefer doing instead of beating wild pokemon).
