The Janitors closet will have bolt-cutters at the very least, as well as some nice mops/brooms for pole/spear weapons. The chemistry labs will have lots of nice compounds many of which you could make small explosives out of. Defeat the zombies by pouring liquid nitrogen down their throats!

Also should stock up on things like curtains that can be used as ropes, or even shields against zombies :D
Steel legs of desks will work nice too~!

Also I don't think most of the tools in a workshop would be very good against zombies. Table saws and hand saws will not go very far, and knife combat is something you want to avoid! Though a hand-saw could be quite... handy.
