Hmm..I usually go up to 400 - 500%. If it's more detailed of an image then I might zoom in even more.
But if it's a simple background one as Selvaria mentioned, you don't need to zoom at all.

I always start out my sigs with normal 500 x 200 sizes

I just don't like how the 500 x 300 looks.

however I may make it even smaller then 500 x 200 depending on how the size meaning if it doesn't fit the 500KB size limit.

Well, in 3/4 case uses SB gif-siggys, and the siggys from SB are flatter.
...And Unown-kun uses always full siggy-sizes (300×500).

@km I also tend to like the longer sigs, just because they usually fit nicely in the space under the comment.

You'll notice that mine is 500x298
