Does anyone know games that resemble that? I feel like games where you can watch your MC grow are very Niche

It depends on what you specifically mean by watch MC grow.
In Our Life, you are the MC, and as far as I know, Our Life's format is considered unique even among otome game veterans.
There are other games that aren't otome, where you can watch someone grow up. They're known as "princess maker" type of game, where you - the player - isn't really the focus. You play as a parent (though a lot of games don't allow gender selection, they default to you being the "father"...) and raise a young girl from childhood to adulthood.
Games like that include the famous Princess Maker series, Volcano Princess (which was posted above), Ciel Fledge and Magical Princess.
There are also some games like Growing Up and Chinese Parents. I did try them out a while ago, iirc in here you really are the MC, it's your story. So in a way these are similar to Our Life, though they aren't as story-driven and more focused on stats + gameplay. I wouldn't say the relationships feel as fleshed out as OL either.
