One I recently finished and genuinely loved all the interaction and romance was Zafora (Radiant Tale). I was surprised by how natural and mature his romance is in the game. My favorite is still Vilio in the game; I love how everything about him is very "fairytale-like." I think the decision to make his hair pink was to avoid looking like Lagi (Wand of Fortune), after all, it's the same artist.

Kei from ken ga kimi , his endings had me dead 
he's so sweet and nice man !! He was willing to throw everything for Kayo ( heroine) all village wented him dead and her father hated him and screamed on him ( Her father is deeply protective and hesitant to let his daughter marry a demon) but heroine ran away and escaped for him or another happy ending for him, kayo's father gave him a near-impossible challenge as a test of kei's devotion ,he must pluck and gather 1,000 flowers by dawn, he would let Kei marry Kayo and HE DID IT FOR HER )
( tbh all male leads from ken ga kimi had my heart )

I really love Paschalia from Radiant Tale 
He has such beautiful long hair, and I honestly think he's absolutely gorgeous (灬º‿º灬)♡
He's also such a gentle guy, and his voice actor fits the character perfectly
I also really like Minami from 9 R.I.P. He's such an emotional and unpredictable character that sometimes I can't even keep up with his moods
But he's still an adorable little demon ෆ╹ .̮ ╹ෆ

My top 3 would be... every time MC went shopping with Toma (Amnesia).
The 1st time when MC was choosing her underwear and the saleswoman didn't let Toma run away. The 2nd time MC was eyeing another underwear store, Toma had PTSD didn't want to go yet still went along and run into the same saleswoman he hoped to avoid. And the 3rd time meeting that same saleswoman again!
Also love every scene with Minami (9 RIP) and Yori (Itehari)! <3 <3 <3

YEEEEEES I loved those scenes lol It was so cute! (Spoiler for the CG)
Some of my other favourites include the banter between Enomoto and Sasazuka from Collar x Malice, and a lot of the scenes in Yo-Jin-Bo, like everyone picking on Mon-Mon, or Jin telling the MC that Muneshige collects pennies as a way to say he has a lot of money, or the bathhouse scenes! I laughed so hard.

any interaction with helvetica from bustafellows i just really love everything about his personality i find him so very funny. like the way he hangs up the phone after he's done speaking even if the other person is still talking always makes me laugh

In this scene, Tiana and Silvio find a flower that can only be found at night because it glows in the dark.

Not a specific interaction per se, but I really like when games have interaction between the LIs and side characters, or a LI with a childhood friend! It's a nice getting to see how a LI interacts with other characters besides the MC, and it can show us new sides of them ;)
It's one of the things I really liked about VariBari, getting to see the LIs bickering and joking around with each other. Other cute thing games will do sometimes is have the LI interact with a child/little brother type character, that can be very endearing (one that I can remember is how the LIs would interact with Yuki in 7scarlet)
The one fresh on my memory is Cafe Enchante though! I loved seeing the LIs chatting with Kariya, the dynamic between Misyr and Il (and Solitus and Il too!) and all the bickering between LIs :)
